Didn't go well, but not a complete loss.  Turning on the water resulted in leaks at the first connection after the valves for both hot and cold waters.  This required cutting some of the initial PVC out and redoing it.  Had to go to Home Depot for new fittings.  Got that fixed then there was a very very minor leak at the first water filter.  That was able to be fixed without major effort.  So the water is working up to sprinkler solenoid valves.

We had significant issues installing the drip emitters into the water lines.  I think Lowes sold me the wrong type of water lines to use with drip emitters, but will require some research to figure this out.
I used to be a people person... but people ruined that for me.

I just used pex tubing for my drip emitter.  I want to say it was a little smaller than 3/16" diameter.  Since the tubing is so small I used some small zip ties as hose clamps, not sure how effect that works as hose clamps, but it doesn't leak.  I also run a pressure regulator on mine to drop it down from 60psi to 20psi, as the site I got mine from said this was recommended.

I used 1/2" Pex as recommended by Lowes.  There is NO WAY to use the drip emitter hole punch as instructed.  We tried drilling but the holes where always too large or the drip emitter wouldn't fit in the Pex without busting first.  Tony gave me a good idea 15 minutes ago - use a heat gun on the Pex and then punch the hole and put the drip emitter in.  I'll try that later this week.

The pressure regulators I purchased came from Jehmco and take water pressure down to 30 PSI.  I think that is too much still but Jehmco says that is what I need.  Chris Benes (Pet Suppliers) said he uses pressure regulator intended for boilers that goes down to 15 PSI - that sounds more like it to me.

Have bought a lot of fittings for other things from them but have never set up a drip system just a water changer using sprinkler timers.

The advice from the guys at lowes probably works for what most people use drip emitters for because it is normally in a garden or underground.  I only run one emitter for water change on my turtle tank, so it makes it a little easier.  I think if I was going to setup a room I would look into running rigid pvc, using threaded T's with threaded barb fittings and running individual pex lines to each tank.  With that method though you would probably have to have a ball valve at every connection, and would probably get expensive quick.

I wouldn't expect anyone working for a large store to offer any great knowledge. Unfortunately the way things have developed, people working for chain stores tend to know little about what they actually sell.

For the pressure regulator, why not use a variable one? The impression I've got is that you don't have the ability to regulate from a variety of pressures yourself. I did a DIY sprayer this past spring and found one at TSC - you just need to get gauge with it as well so you know what the pressure is actually at.
